Ingredients:
1 head cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons butter
2 cloves garlic, minced
8 oz mushrooms, sliced
1/2 teaspoon thyme
1/4 teaspoon chili flakes (optional)
Fresh parsley, chopped (for garnish)
Directions:
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Toss cauliflower florets with olive oil, paprika, salt, and pepper.
Spread evenly on the prepared baking sheet.
Roast in the preheated oven for 20-25 minutes, or until the cauliflower is golden and crispy around the edges.
While the cauliflower is roasting, heat butter in a skillet over medium heat.
Add garlic and sauté for 1-2 minutes, or until fragrant.
Add mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until mushrooms are tender and browned.
Sprinkle thyme and chili flakes over the mushrooms and continue cooking for another 2 minutes.
Once the cauliflower is done, remove from the oven and add it to the skillet with the mushrooms.
Toss everything together and cook for another 3-4 minutes to combine the flavors.
Garnish with fresh parsley and serve hot.
