Egg Salad Sandwich

Ingredients
6 hard-boiled  eggs, peeled and chopped

1/4 cup mayonnaise

1 tsp Dijon mustard

1 tsp lemon juice.

1 tbsp chopped chives (plus more for garnish)

Salt and pepper to taste

4 slices of whole-grain or sourdough bread,

toasted
Butter or lettuce leaves (optional)

Instructions
Begin by hard-boiling the eggs. To do so, place the eggs in a pot, cover them with water, and bring the water to a boil.

Once the water is boiling, reduce the heat to low and simmer for 9–12 minutes. Afterward, transfer.
