Cheesy Mashed Potato Muffins with eggs

Ingredients

  1. 2-3 large potatoes, peeled and mashed
  2. 1/2 cup grated cheddar cheese
  3. 1/4 cup grated Parmesan cheese
  4. 2 eggs
  5. 1/4 cup milk or heavy cream
  6. 1/2 teaspoon salt
  7. 1/4 teaspoon black pepper
  8. 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
  2. Mix mashed potatoes, cheddar cheese, Parmesan cheese, eggs, milk, salt, and pepper in a bowl.
  3. Divide the mixture among the muffin cups.
  4. Drizzle melted butter on top of each muffin.
  5. Bake for 20-25 minutes or until the muffins are golden brown.
