Crispy Polish Potato Pancakes

Ingredients

  1. 4 medium potatoes, peeled and grated
  2. 1 small onion, grated
  3. 2 eggs
  4. 3 tbsp all-purpose flour
  5. 1/2 tsp salt
  6. 1/4 tsp pepper
  7. Vegetable oil for frying
  8. Sour cream or applesauce for serving (optional)

Instructions

  1. Grate potatoes and onion. Squeeze out excess moisture.
  2. Mix with eggs, flour, salt, and pepper.
  3. Heat oil in a frying pan. Drop spoonfuls of mixture into oil.
  4. Flatten slightly and fry until golden brown and crispy.
  5. Serve hot with sour cream or applesauce.

Tips

  • Use Russet potatoes for best results.
  • Don’t overcrowd the pan.
  • Adjust oil temperature for crispy pancakes.
