Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
4 (8 oz) packages cream cheese, softened
1 1/4 cups granulated sugar
1/2 cup sour cream
2 teaspoons vanilla extract
5 large eggs
Directions:
Preheat your oven to 325°F (163°C). Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of a 9-inch springform pan. Set aside.
In a large bowl, beat cream cheese until smooth. Gradually add 1 1/4 cups sugar, beating until creamy. Blend in sour cream and vanilla.
Add eggs one at a time, beating just until blended after each addition. Pour over crust.
Bake for 55-70 minutes or until the center is set. Turn off the oven; leave the cheesecake in the oven with the door ajar for 1 hour.
Remove from oven, cool to room temperature, then refrigerate overnight.
Serve this classic New York Cheesecake chilled, topped with fresh berries or fruit sauce if desired.
