Ingredients:
- 4 boneless, skinless chicken breasts (or thighs)
- 1/4 cup honey
- 1/4 cup soy sauce (low-sodium if preferred)
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional for heat)
- Salt and pepper to taste
- Chopped green onions, sesame seeds (for garnish, optional)
Instructions:
1. Prepare the Sauce:
In a medium bowl, whisk together the honey, soy sauce, olive oil, garlic, rice vinegar, oregano, and red pepper flakes (if using). Season with salt and pepper to taste. This will be your flavorful sauce for the chicken.
2. Place Chicken in the Slow Cooker:
Place the chicken breasts or thighs at the bottom of the slow cooker. Make sure they are arranged in a single layer for even cooking.
3. Pour the Sauce Over the Chicken:
Pour the honey garlic sauce over the chicken in the slow cooker, ensuring the chicken is well-coated with the sauce. You can lightly toss the chicken around in the sauce if desired.
4. Cook the Chicken:
Cover the slow cooker and cook the chicken on low for 4-6 hours, or until the chicken is tender and fully cooked through (internal temperature should reach 165°F or 74°C). If you’re in a hurry, you can cook it on high for 2-3 hours.
5. Shred the Chicken (Optional):
Once the chicken is fully cooked, remove it from the slow cooker and shred it using two forks for pulled chicken. If you prefer, you can serve the chicken whole. Either way, pour some of the sauce from the slow cooker over the chicken before serving.
6. Serve:
Serve the chicken with your choice of sides, such as steamed rice, mashed potatoes, or vegetables. Garnish with chopped green onions and sesame seeds for added flavor and presentation.
