Mexican Shrimp Cocktail


Fresh, tangy, and bursting with flavor! This classic Mexican shrimp cocktail is the perfect combination of seafood, citrus, and spice—great for a light meal or appetizer.

Ingredients:
1 lb cooked shrimp, peeled and deveined


1 cup tomato juice (Clamato or V8)


¼ cup ketchup


2 tbsp hot sauce (like Valentina or Tapatío)


¼ cup lime juice


½ cup diced tomatoes


½ cup diced white onion


½ cup chopped cilantro


1 small jalapeño, thinly sliced


1 small cucumber, diced


1 medium avocado, diced


½ tsp salt


½ tsp black pepper
Lime slices for garnish


Instructions:
1️⃣ Prepare the Base:

In a large bowl, mix tomato juice, ketchup, hot sauce, and lime juice. Stir until well combined.
2️⃣ Add the Shrimp & Veggies:

Stir in shrimp, diced tomatoes, onions, cilantro, jalapeño, and cucumber. Season with salt and black pepper.
3️⃣ Chill & Serve:

Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
4️⃣ Garnish & Enjoy!

Just before serving, gently fold in diced avocado. Garnish with lime slices and extra jalapeño for a spicy kick!
Serve with saltine crackers or crispy tostadas for an authentic touch!
