pot roast with potatoes and carrots

Ingredients:

  • 3 lb chuck roast
  • 1 lb potatoes, chopped
  • 4 carrots, chopped
  • 2 onions, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions:

  1. Season the roast with salt and pepper. Sear on all sides in a hot skillet.
  2. Place roast in a slow cooker. Add potatoes, carrots, onions, garlic, beef broth, Worcestershire sauce, and thyme.
  3. Cook on low for 8 hours or until the meat is tender.
