Ingredients:
For the potato wraps:
3 large potatoes, grated
1 egg
1/2 cup shredded mozzarella or cheddar
2 tbsp chopped fresh parsley or herbs of choice
Salt & pepper to taste
For the filling:
1/2 lb (225g) ground beef or turkey
1/2 onion, finely chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1 tbsp tomato paste
Salt, pepper, paprika, and chili flakes (to taste)
For topping:
1 cup shredded mozzarella
Optional: bechamel or cream sauce drizzle
Instructions:
- Make the Potato Wraps:
Grate the potatoes, then squeeze out excess moisture using a clean towel.
Mix with egg, cheese, herbs, salt, and pepper.
Spread into thin rectangles (like tortillas) on parchment-lined baking sheets.
Bake at 375°F (190°C) for 15–20 minutes until firm and lightly golden.
- Prepare the Filling:
Sauté onions and peppers in a bit of oil.
Add ground meat, cook until browned.
Stir in tomato paste and seasonings. Cook until thickened and flavorful.
- Assemble Rolls:
Place some filling on each baked potato wrap.
Roll them up and place seam-side down in a greased baking dish.
- Add Cheese and Bake:
Sprinkle mozzarella on top.
Bake at 400°F (200°C) for about 10–15 minutes, or until cheese is bubbly and golden.
