Spinach Stuffed Pastry

Ingredients:

1 sheet puff pastry, thawed

2 cups fresh spinach, chopped

1/2 cup ricotta cheese

1/4 cup feta cheese, crumbled

1/4 cup grated Parmesan cheese

1 garlic clove, minced

1 tbsp olive oil

Salt and pepper to taste

1 egg (for egg wash)

Preparation:

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a skillet, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted. Remove from heat and let cool.

In a bowl, mix the cooked spinach, ricotta, feta, Parmesan, salt, and pepper.

Roll out the puff pastry and cut into squares. Spoon the spinach mixture into the center of each square.

Fold the pastry over to form a triangle or rectangle and seal the edges.

Brush with a beaten egg and bake for 20-25 minutes, or until golden brown.

Serve warm and enjoy!
