Vegetable Soup Recipe


Ingredients

  1. 1 onion, chopped
  2. 2 tablespoons olive oil
  3. 2 leeks, chopped
  4. 2 stalks of celery, chopped
  5. 1 carrot, diced
  6. 1 red pepper, diced
  7. 1 zucchini, diced
  8. 2 potatoes, diced
  9. 2 garlic cloves, minced
  10. 1 chili pepper, minced (optional, for spice)
  11. 4 cups vegetable broth (or water)
  12. Salt and pepper to taste
  13. Fresh herbs (optional, e.g., parsley or thyme)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, leeks, and celery. Sauté until tender, about 5 minutes.
  3. Add the diced carrot, red pepper, zucchini, potatoes, garlic, and chili pepper (if using). Cook for another 5 minutes.
  4. Pour in the vegetable broth or water. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the vegetables are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh herbs if desired.

Tips

  • You can customize the soup by adding other vegetables or spices.
  • For a creamier soup, blend some or all of the soup.
