Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon paprika
Zest and juice of 1 lemon
3 tablespoons unsalted butter
1 cup fresh green beans, trimmed
Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Chicken:
Season the chicken breasts generously with salt, pepper, paprika, oregano, and thyme on both sides.
- Cook the Chicken:
Heat the olive oil in a large skillet over medium heat.
Add the chicken breasts to the skillet and cook for 6–7 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C).
Remove the chicken from the skillet and set aside.
- Prepare the Sauce:
In the same skillet, melt the butter over medium heat.
Add the minced garlic and sauté for 30 seconds until fragrant.
Stir in the lemon zest and juice, scraping up any browned bits from the bottom of the skillet.
- Cook the Green Beans:
Add the green beans to the skillet and toss them in the lemon garlic butter sauce. Cook for 4–5 minutes until tender-crisp.
- Combine Everything:
Return the cooked chicken to the skillet, spooning the sauce over the chicken and green beans.
Cook for another 2 minutes to heat everything through.
- Garnish and Serve:
Sprinkle with fresh parsley before serving.
Serve hot
