- 8 oz (225g) heavy cream
- 1/2 cup (100g) granulated sugar
- 2 large egg whites
- 1/2 cup (120ml) freshly squeezed lime juice
- 1 tsp (5g) grated lime zest
- 1/4 tsp (1.25g) salt
- 1/2 cup (120g) mascarpone cheese (optional)
Instructions
- In a medium bowl, whip heavy cream until stiff peaks form. Set aside.
- In a large bowl, mix sugar, egg whites, and salt until stiff peaks form.
- Add lime juice and zest; mix until combined.
- Fold whipped cream into egg mixture.
- If using mascarpone, gently fold into mixture.
- Spoon into individual serving cups or a large serving dish.
- Chill in refrigerator for at least 2 hours.
- Serve chilled, garnished with lime wedges or zest.
