For the Meatloaf:
1 1/2 pounds ground beef
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup milk
1/4 cup ketchup
1/4 cup finely chopped onion
2 cloves garlic, minced
2 large eggs
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and black pepper to taste
For the Glaze:
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon Dijon mustard
Directions:
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, milk, ketchup, chopped onion, minced garlic, eggs, dried oregano, dried thyme, salt, and black pepper. Mix until well combined.
Transfer the meat mixture to the prepared baking sheet and shape it into a loaf.
In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard to create the glaze.
Spread half of the glaze over the meatloaf, ensuring an even coating.
Bake in the preheated oven for 45 minutes.
After 45 minutes, remove the meatloaf from the oven and spread the remaining glaze over the top.
Continue baking for an additional 15-20 minutes or until the internal temperature reaches 160°F (71°C) and the top is nicely caramelized.
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
