Ingredients:
1 ½ cups finely chopped pecans
1 cup graham cracker crumbs
1 cup powdered sugar
1 cup brown sugar, packed
2 tablespoons unsalted butter, melted
¼ cup maple syrup or corn syrup
1 teaspoon vanilla extract

8 oz. semi-sweet or dark chocolate, melted

Instructions:
Prepare the Filling:
In a large mixing bowl, combine the finely chopped pecans, graham cracker crumbs, powdered sugar, brown sugar, and cinnamon (if using).
Add the melted butter, syrup, and vanilla extract. Stir until the mixture forms a thick, dough-like consistency.
Shape the Balls:
Scoop out about 1 tablespoon of the mixture and roll it into a ball with your hands.
Place the rolled balls on a baking sheet lined with parchment paper.
Repeat until all the mixture is used.
Chill the balls in the refrigerator for about 30 minutes to firm up.
Coat in Chocolate:
Melt the chocolate in a microwave or double boiler until smooth.
Dip each chilled pecan ball into the melted chocolate, ensuring it’s fully coated.
Place the chocolate-coated balls back on the parchment-lined baking sheet.
Optionally, sprinkle some extra chopped pecans on top before the chocolate sets.
Chill and Serve:
Refrigerate the pecan pie balls for another 20–30 minutes to let the chocolate harden.
