  2. 1/4 cup (60g) granulated sweetener (e.g., Swerve, Erythritol, or Monk Fruit Sweetener)
  3. 1 tsp (5g) vanilla extract (optional)

Instructions

  1. Chill coconut milk in refrigerator overnight.
  2. Open and scoop out solid coconut cream.
  3. In a blender or mixer, combine coconut cream, sweetener, and vanilla extract (if using).
  4. Blend until smooth and creamy.
  5. Transfer mixture to a saucepan.
  6. Heat over low heat, stirring constantly, until sweetener dissolves.
  7. Remove from heat; let cool.
  8. Refrigerate or freeze for later use.
